- Chardonnay: golden yellow in appearance. Floral, fruity fragrances. Notes of fresh butter and hazelnut developing towards a bouquet of honey and spices.
- Viognier: very fine wines with a golden appearance, body and tropical fruit flavours, long and mellow to the taste.

Vin de Pays Côtes de Thau, Vin de Pays Côtes Catalanes, Côtes de Thongue, Vin de Pays de la haute Vallée de l’Orb etc.
HARMONIES → Aperitifs, white meats, poultry, shellfish, oysters, seafood, snails, fish, cheeses, desserts and fresh fruit.
Dry whites
“Haute Vallée” wines are the most mineral-tasting:
Wonderfully elegant, astonishingly fresh-tasting wines.

Which Pays d'Oc wines?
- Sauvignon Blanc- Viognier: pale yellow in appearance with green tints. Citrus and apricot flavours for this bright, fruity wine.

Vin de Pays des Coteaux d’Enserune, Vin de Pays des Côtes de Pérignan, Vin de Pays de la Côte Vermeille etc.
HARMONIES → Aperitifs or with a meal, Mediterranean cuisine: grilled fish or cooked in sauce, fish soup, tielle sétoise, seafood, goat’s cheese or other cheeses (pélardon).

Does white wine really cause headaches? No! That might have been true years ago when the amounts of sulphur added were poorly calculated. But technical progress today means that dosages have been greatly reduced.
